I'm wondering what it would take to convert a 10 speed campy bike to 9 speed campy. Can you just replace some shifter internals and replace the rear derailleur? I'm wondering about the changes I might need to make for a double Centaur group.

As I understand it, you don't need to replace the rear derailleur. All you would need to do is replace the shift disk (requires removal of the right lever from the bar) and obviously new cassette and chain. That should do it, everything else will work.
