I just got to ride a nicely (not quite as nice as yours) equipped 585 demo in my size (51). It is a very similar build to yours (DA10, etc) except it had DA brakes and Easton Orion II wheels rather than the Rolfs.
My question is about the "feel" of the steering. The front end is considerably lighter than my Litespeed Tuscany/Ouzo Pro fork/DA9 setup. The 585 felt a little too precise up front such that a little extra lean or pressure on one side of the handlebars seemed to cause a little shimmy. The LBS tightened up the headset a bit and things seemed improved. The bike was rock steady on a very steep descent. In other ways, the bike seems very responsive, light and fast.
Is a little more attention needed to ride a very light bike like this?

Secondarily, how do you like the Rolfs? I was thinking about Bontrager Race X Lites or Ksyrium SL SSC because they seem to be light and sturdy for everyday use.

That quick feel is really what you are used to. I own a Calfee and on our forum sometimes people make much the same comment when they get a new one. It is more a product of geometry, lengths of stays etc. I like a quick reacting bike myself. I'd guess after a few rides you won't even notice it.
