At least for now carbon is all the rage. It wasn't too long ago that folks wanted Ti everything. Now they want carbon everything whether there is a significant advantage or not to that material. Personally I would not want a light all carbon stem...but that is me. Who knows what material is next.

There will always be a market for steel. I prefer carbon for weight, stiffness and practicality since I ride all year in all types of weather.

That said if I had the money and room I'd love to have a steel frame to ride as well. A friend of mine is not riding his Waterford as much and I quickly asked him if he wanted to sell it. Unfortunately his answer was no.
