Quite a few manufacturers offer offset rims for the rear wheel,Campy, Ritchey and Velocity are but a few names of which you mentioned all three already. The idea here is to give the wheel a more symetrical dishing by placing the spoke line over to the left side of the rim in the built wheel, this idea does help the assymetrical design in the more offset 8 thru 10 speed rear wheels. Some manufacturers even went so far as to offer a frame with the rear stays offset to reduce the ammount of dish necessary in the rear wheel.
Way back in the late 80s when the system was still 7 speeds, i had taken three Shimano rear cassette hubs and lathed off a portion of the rear lip on the body where the inner cog sat, this allowed me to send the cogs a bit more to the left as possible. Then lathing the flat faces of the RH cones and lock nuts brought the whole assembly with cogs fitted as close to the RH dropout as feasibly possible. The axle was shifted to the left side as well and a wider aluminum spacer made to compensate for the now longer LH distance which in some cases depending on the model of hub was almost 5 MMs in total. The result was a super strong rear wheel with almost no visible dish, it was also possible to fit spokes that were also the same length on both sides, giving you an idea oh how close the symmetry was. I then used one of these project wheels for a test rig and logged about 10,000 miles on it myself over a few years, the other two i sold to riders in the club we had at that time. The owner of one wheel still has it, and still uses it on his old 7 speed bike, he often tells me that he's never had a wheel so durable and troublefree, at over 230 pounds he definately isn't a light person. The other wheel i lost track of since its owner moved.Mine was dissambled a few years ago and the hub and cogs packed away, who the heck wants 7 speeds nowadays anyway.
