I think you got you got a great deal! I purchased a used Calfee Luna Pro a year ago for $1,850 which seems like a lot compared to the deal you got. However, My Luna had almost all new Campy Record equipment on it. A year later and I have now changed everything on the bike except the cassette, seatpost, headset and shifters. Well, I became a little obsessed with my Calfee.
There are adjustable stems. They tend to weigh a little more but they can reach angles you couldn't reach with a fixed stem.
San Diego has a lot of great riding. You should look into some of the local bike clubs. I joined a club and found places to ride I didn't know existed.
